| “Mediterranean cuisine is often considered Greek or Middle Eastern, however I use ingredients, flavors and techniques from the dishes of many countries around the Mediterranean Sea. These also include France, Spain, Italy, North Africa and others. I enjoy coming up with new takes on old traditions, by blending and simplifying different dishes without regard to borders. These influences can be found in the food I cook from Texas as well.” |
